These articles contain my weekly diary entries, my bucket list, my food recipes & other things that I find interesting. Along with general information about the place that I live in, Los Alcazares, it also contains my often told stories of how I have met many 'celebrities' during my travels, memories of my past that sometimes come flooding back to me & the occasional joke or three.

I hope you enjoy reading about my interests & that if you disagree with some of my opinions in this section of my website, that it won't stop you buying me a beer when you see me next.

The sun is back out in Los Alcazares & the skies are back to their normal deep blue colour. This will be an interesting week, I have some new shelves & flower containers being put up &  I also have an appointment to see a cardiologist in Cartagena.

Rain is forecast in Los Alcazares for the start of the week, but it often passes right by us here. I hope it does this week & that it still starts warming up. Next month I plan to start swimming & kayaking again soon.

I had bought 4 large chicken breasts with the intention of making something I could freeze. After thinking about what I wanted & searching for some new recipes I decided on something I had not eaten or cooked before. This recipe is for a slow cooker.

Berlanga de Duero castle

Berlanga De Duero Castle.

This castle was built in 1527 & is in the Castile & Leon area of Spain. I had never seen or heard of this place before a picture of it popped up as a screensaver on my laptop.

Last week ended with some sunshine & some of our liberties returning to us, I hope people are sensible so that we can continue to enjoy more freedom as COVID allows us.

The figures from my weigh in are, 17 stone 8lb. A loss of 1lb in my fifth week, At least it is heading in the right direction again after a couple of weeks of small gains I have a small drop in weight again.

The figures from my weigh in are, 17 stone 9lb. A gain of 1lb in my fourth week, Again I am not sure how, maybe lack of exercise again. My motivation needs to kick in to do more exercise but its hard. I seem to sit down to do half hour genealogy research and not move for the whole day.

Due to the Corona virus restrictions & the cold, I decided to stay at home in the warm this New Years Eve & I saw in 2021 with James Bond, unfortunately M didn't make it too far in to the New Year before she passed away. In true Hollywood style, all be it in Scotland in the snow, in a dingy family chapel, she died in James arms.

It is very hard to write daily posts that are not repetitive when you are unable to get out much due to your levels of fitness, the weather, or the dreaded COVID19 causing you to be isolated to differing degrees. At times during last year I wished I had kept a better diary to help me look back at what was a very frustrating year, a very sad year & a very lonely year.

I made this soup toay after seeing that my friend Tash had made it. I quickly googled a recipe, threw some of the ingredients away, added some of my own, shook all the ingredients up & came up with this lovely creamy, curried cauliflower soup.

During the colder months I do enjoy my home cooked soups & the easier they are to make the better. This Roast pepper, tomato & coconut soup is very easy & very tasty. I spiced it a bit by adding some chillie flakes but you can simply miss them out.

I have been trying to lose weight for a long time & have had different results at different times. I have now been doing the 16/8 intermittent fasting diet for two weeks.

I have been trying to lose weight for a long time & have had different results at different times. During the lockdown period, it has been difficult to lose weight because of the limitations on moving around & the simple boredom making me eat more.

I think the first time I saw a Segway was on the television. It was a policeman riding one somewhere & I thought straight away that I had to have a go. I have managed to ride a Segway several times now & if I had the money I would buy myself one. They really are fun and easy to use once you have got the hang of them.

I remember seeing Elvis diving off a cliff in one of his films & thinking how cool it would be to have a go. The reality was a bit less fun & I would advise anyone not to try this one. That said I have done it, although it could have been the last thing I did.

As a small boy I was fascinated by Marco Polo and have always been interested in visiting China. One of the things I had on my bucket list was to walk a section of the Great Wall of China. The pictures of it that I had seen on the television, in magazines books and on the internet always made it look a great place to visit.

Machu Picchu was one of the places my dad always wanted to go and never went to because of ill health. Because of my dad I started looking into Machu Picchu to see what it was, where it was and why it was he wanted to go there.

My mum & dad both went to Jasper National Park in Canada, on one of their holidays & once I saw the photos of them there, I immediatly put it on my bucket list.

Elephant Nature Park.

The Elephant Nature Park is a unique project set in the Chiang Mai province in Northern Thailand. It was established in the 1990’s & it's aim is to provide sanctuary & to be a rescue centre for elephants.

Eiffel Tower, Paris.

Visit the Eiffel Tower.

My mum would have told you that I have already been up the Eiffel Tower as she was pregnant with me when she visited it in 1966 but I would like to go again and get a better view this time. Strangely as I live relatively close to France & Paris I have never made it as an adult to Paris to have a look round.

Petra is a historical & archaeological city in the southern Jordanian governorate of Ma'an that is famous for its rock cut architecture and water conduit system. Another name for Petra is the Rose City due to the color of the stone out of which it is carved.

Angkor Wat in Cambodia.

Angkor Wat is a temple complex in Cambodia and the largest religious monument in the world. It was originally founded as a Hindu temple for the Khmer Empire, gradually transforming into a Buddhist temple toward the end of the 12th century.

Chichen Itza in Mexico is a place that I have only ever seen on the television but is a place that as soon as I saw it I thought I had to make a visit.

Great Barrier Reef, Australia.

Dive the Great Barrier Reef.

I have always loved swimming & have always been fascinated by documentaries on the Great Barrier Reef off of Queensland, Australia. It still is one of the places on my bucket list. I have been scuba diving of the Florida Keys and loved it but it has been an ambition to go scuba diving on The Great Barrier Reef for as long as I can remember.

I recently saw the Sanctuary of the Virgin of Hope on the Internet & thought it looked a great place. I can't believe it is so close to where I live & that I have not heard of or seen anything about it before.

Kaleto Fortress at Belogradchik in Bulgaria.

The Kaleto Fortress is an ancient fortress located on the north slopes of the Balkan Mountains, close to the northwestern Bulgarian town of Belogradchik & is one of the best preserved strongholds in Bulgaria. The fortress walls are over 2 metres thick in the foundation & reach up to 12 metres in height. There are three separate fortified yards that are connected with each other through gates. The fortress has a total area of 10,210 square metres.

Chilli con carne ingredients

Chilli Con Carne.

I had a look at several recipes & couldn't decide which to use so I mixed and matched between several that I liked & came up with my own Chilli con Carne recipe. This made enough for six portions of chilly. I wouldn't say it is really hot as I prefer taste over heat but it will warm you up on a cold night. This chilli recipe is great with homemade chips or rice, I have tried it with both.

Leek & Potato Soup.

When I woke up this morning I decided to make this leek & potato soup. I trundled off to the bank on the Sharky mobile, then after withdrawing some money & feeling very cold, it was only 11 centigrade, I continued up to the supermarket to buy some missing ingredients. On the way home I stopped off for a tostado & an Asiatico coffee to warm me up before going home. Now after a warm cup of orange & cinnamon tea I am feeling warmer and ready to get on with it.

This recipe for Butternut Squash & Carrot soup is based on a recipe that my good friend John Cole gave me. I took his recipe & I just spiced the basic Squash & Carrot soup recipe up a little bit. I'm very sorry for not sticking to the original recipe Chef John but I wanted to give it a twist & this soup recipe definitely warmed the cockles of my heart.

A while ago I ate pig cheeks in a local restaurant & thought I would buy some to try & cook them myself at home. I hunted around for a recipe & couldnt find anything I liked so I came up with this, I will try anything once.

Cauliflower heads.

Cauliflower, Cheese Soup.

I never used to eat cauliflower, from my childhood I remembered it as a horrible vegetable but I saw lots of recipes for it & thought I would give it a go. Once I had done it I decided it tasted lovely & have now made it a few times. This is the very simple recipe that I use for my slow cooker. You can play around with the type & amount of cheese you put in it. I cook the soup in a slow cooker as it is easy to leave on & have when you return from a day out.

This soup is a beautiful healthy soup ideal for colder days or if you aren't feeling well. It tastes so good I will be catching every cold I can to give me an excuse to eat it. I first made the broth before adding chicken & vegetables to complete the soup.
