Blueberry Cheesecake Overnight Oats

This recipe for Blueberry Cheesecake Overnight Oats, was based on a recipe I saw online and altered to suit my taste, using things I already had in the fridge and cupboard.

The recipe will yield enough for 2 jars. I make them in advance a couple at a time to keep in the fridge. Because I want them mixed well I mix them in a big bowl and then separate the mix into jars.

Ingredients

  • Rolled oats: 1 cup
  • Chia seeds: 24 g
  • Cinnamon: 1.3 g
  • Cottage cheese: 200 g
  • Milk: 2 cups
  • Honey: 30 g
  • Blueberries: 150 g
  • 1 cup vanilla protein powder

Instructions

  1. In a bowl, add oats, chia seeds and cinnamon. Stir to combine.
  2. Add cottage cheese and milk, then mix until smooth and evenly combined.
  3. Stir in honey and vanilla protein powder until fully incorporated.
  4. Fold in the blueberries gently.
  5. Divide into two jars (330 g per jar).
  6. Seal the jars and refrigerate for at least 6 hours, preferably overnight.
  7. Serve chilled. Optionally top with extra blueberries or a drizzle of honey.
